Cmon give me your favorite "Home Run" side dish for this thanksgiving...

I am starting my stuffing quest....bought some really neat cajun sausages....and come chicken apple...now the rest of the ingredients are coming to me.....have som Macadamia nuts....some shelld pistachios......jalapenos....corn bread....bunch of cheeses


I will show you these in real time....

sides here are somewhat traditional, people expect certain things and we have some picky eaters. So no macadamia nuts or pistachios in the stuffing

Not really a side, more of a condiment.... I love homemade cranberry sauce and it's simple .....

This is a new secret ingredient to my cranberry sauces, it gives it a little bit deeper(?not sure if this is the word I want) flavor.

Duck breast wrapped in bacon marinaded with soy ,red cook wine teriyaki. I get the request every thanksgiving too bring this,, however my buddies hasn't killed any ducks yet :(

that duck sounds good. duck and bacon. does it get better. i love your cranberry sauce deb. a great cranberry sauce on thanksgiving is a must. ;)

Deb the way the nuts come out they cant tell...they get pretty soft....

I made bread today to use for my stuffing...... it's pretty much a white bread recipe with a bunch of cornmeal that was soaked in boiling water (after I poured the water in I wished I had used turkey stock:( ) I added poultry seasoning and swirled in some chopped cranberries in one loaf

My favorite side dish that always gets accolades is probably my homemade cornbread & sausage stuffing.

- A loaf of whole wheat bread cut into cubes.
- about an equal amount of homemade cornbread (1/3 to 1/2 of the bread mix is cornbread).
- Chopped Celery & onions sauteed in some olive with Sage, Rosemary & a little black pepper.
- Shredded or julienned Zucchini (optional - but nice)
- Shredded carrot (NOT sauteed - I like using a vegetable peeler to get thin shreds then chop roughly)
- 1 lb. spicy breakfast style sausage browned (I usually make homemade turkey sausage for this).
- 2 - 3 eggs
- Additional dried Sage & Rosemary (Dried rosemary is very strong so not too much)

Mix everything together in a big bowl, then add:

- Turkey or chicken stock - enough to make the mixture wet, but not sopping.
- Salt (sparingly to taste)

Fry up a little bit in a skillet to taste. Adjust seasonings/salt if needed.

Bake in a dish at 275°-350° until a slightly browned on top.


Notes:

I don't have exact amounts, especially for the broth. You never know how dry the bread is going to be and as far as the chopped veggies, if you like it a little more crunchy add more celery/onion and/or chop them into bigger pieces.

This is my own variation. Experiment and have fun with it. Create your own


This year I may toss in a few cranberries to see how it turns out.
