I found this bargain earlier in the week.

IT is in the 160s, so we have a ways to go still. I bumped the temp to 250° and will check back in a couple hours.

PDG. You know when you bite into some of the bark. ZING. But not blow your head off hot.. It has a real good flavor, as long as you don't cake it on like batter. Mrs approves, so I have it in a bucket cooling down, and will vacuum pack it for our freezer tomorrow.

Yeah, that should have been 2.79/lb. The one next to it was 23 bucks! (which is almost criminal in itself) Somebody screwed up..

The HDD was pretty potent, but I love the flavor/color the Sriracha brought to the party. I'm going to use it as a glue more often.

hello i am new and i am wondering why you cool down pork but with ice and bucket or cooler,and what that does?

Great deal on the pork!
When I find a deal like that, I buy up a bunch, and freeze it.

I really like the idea of a little hot spice on the bark

I agree with you Squirt, Sriracha is awesome, great flavor and nice mild heat to it!!!! Would never of thought of using it as a glue though, that's some good thinking bro! You got a nice looking butt there! no homo! lol

Squirt, I was just thinking have you tried using Siracha on your Turkey Boulders??? That could make some really good deli meat!
