Last few days have been cooking fish on the MAK. Full size flame zone, MAK sear grates at 400º. Using Swai fillets (Japanese catfish). All with the Lemon olive oil BP has on his site and the three seasoning we tried. Listed in the finishing order based on our taste
1 Desert Gold
2 Jallelujah Bacon Jalapeno Rub
3 Money

The Desert Gold would be a guest favorite and the blend of flavors are fantastic
The Jallelujah on the fish seem to bring the Maple flavor out just a little more and I liked a lot. For my personal use would use more next time. I can see this with fish tacos.
The Money rub was good as always, but I prefer it on red meat.

Just used the Desert Gold on some Keta Salmon and I would agree with your assessment Jim. Seems like DG is perfect for fish and gives a great flavor profile.
