Grilling burgers and dogs...

I've grilled a lot of burgers, dogs, and bratwursts on my pellet grill and I think they come out tasting like the best ones I have ever had. Way better than my charcoal grill does them. Lots of flavor from that wood!

I just wanted to throw this out there since I'm grilling some brats now and made me think about it.

I have to say, I must be doing something wrong with burgers. I have done burgers once on my pellet grill and they turned out *ok*. I was actually planning on (wait, let me check to see if any one is listening...sshhhhh..) going back to my gasser for burgers. The benefit of the gasser is I like a bit of char on a burger - it gives good flavor - and I can get that quick and easy on the gasser. The big down side is the flare ups. But I am thinking about using my grill grates on my gasser which should reduce or eliminate the flare ups. Don't get me wrong - I have no intention of cooking anything else on gas - I LOVE the flavor from my smoker on everything else that I have cooked!!!

I'm not much on charring, so if that is what you like, I can understand that. I haven't tried any grill plates because I don't have a gas grill, but they look very interesting for that sort of thing.

What about a gasser with an A-MAZE-N-TUBE-SMOKER? Does that count? I could totally see using the gasser or charcoal to do burgers with the tube providing smoke.

I haven't done that yet - I'm just sayin'...

The grill plates/grates are an accessory for the pellet smoker to be able to grill and get the grill marks like a gas grill. Any time I'm grilling hot dogs, burgers etc.... I always use my grill grates which give me great results. BP sells them on his website if you want more info on them.

I agree. I prefer dogs, burgers, and brats on my MAK as opposed to a gasser. And, even more so now with the tube smoker. I cold smoke the burgers and/or brats before kicking up the heat, and get rave reviews from family and friends.

I'm loving hot dogs and sausage on the MAK. Burgers have been good, but I need to work on them. Gotta refine my technique.

Looking to getting into grinding my own blend of meat for burgers. My favorite restaurant in town makes me my favorite burger in town. The Executive Chef there grinds his own blend of beef cuts for that. I'm convinced that it's going to take some of that for me to be really happy with my burgers. Either that, or I'm going to have to specify to the butcher what cuts I want done. If I have time, I'm going to have them grind me up some short rib to see how that works out. Hopefully, that will start to give me some direction to start with.

Burgers are deceptive, I think. My chef friend has worked in 3-Star Michelin kitchens all over the world with the likes of Thomas Keller, Martin Berasategui, and Michel Bras. He has garnered some James Beard nominations the past couple of years. He said that his burger was the hardest thing he had ever done. A lot of tweaking went into that thing including bun recipe, meat blend, burger toppings. It's the one burger that, for me, nothing is missing. Nothing needs to be added. It's just got those archetypal flavors to a simple cheeseburger. It's completely balanced. It's completely perfect, to me. Except sometimes, he throws in some foie gras on the thing or some black truffle as a treat for me. So, I have fun with that.

Anyway, we'll see what I can come up with this year for burgers.
