Thanks everyone. that was my first pellet smoke. I have been using a pit with a side fire box and constantly had to keep check on the temp... on my new pellet smoker I did the 3-2-1- method. I turned it on smoke and took my daughter fishing. I came back three hrs later wrapped them, adjusted my temp to 225. I mowed grass while the smoker did its thing for two more hrs. I will still use my wood burning pit from time to time but I am gonna wear out the ol char-griller pellet machine. this is one happy pellethead.
