I use the reverse sear method on my Traeger without grill grates. After a little trial and error they now turn out perfect everytime. I get some light sear marks but but the flavour of the steaks makes up for a lack of dark lines!! Thanks BP for the tip...

Thanks Sparky. BTW speaking of meat quality and 80's, is it me or do hamburgers taste nothing like they did in the 80's?
And dont get me started on KFC :)

lid down. won't hold heat when its up. turn your traeger and put the grill grates on to warm up. i can grill steaks on my mak w/ grates @ 350° to 425°. no problem. i never turn to high. no need to. the grill grates work good.

Thanks sparky. got some cheap Fredy's steaks on there now. plan on smoking on low for 45 min / 100- 110 internal
then remove steaks and set to high. when it reaches 450 puttn steaks back on and will turn over every 5 mins or so till the temp reaches 135.
Hope I got it down.
lid down :)

Wanted to report back. I followed my battle plan pretty close, only thing that surprised me was how fast the temp shot up from 105 to 135. I was barely able to turn the steak 4 times when I had to take them off the grill. maybe high was to high (over 500).

The grill grate worked OK I guess. It didn't really make the kind of burn marks I was hoping for but I think that was my fault.
after I removed the steaks, I preheated the smoker to 450, but I don't think the grates themselves were anywhere near that hot.
Next time I will try preheating much longer then setting the smoker to med.

I was impressed how tasty the steak came out! barely pink on the inside but soooo juicy! and this was a 10/lbs Freddy's steak not the 15 - 17 /lb stuff I normally buy.

This method you all shared with me is infinitely better then what I was doing before with my Kreager.

I bow to the masters!

I usually just throw my grill grates on right from the begining if I have room... They heat up alot faster that way!

that's what i did too. I put the steaks along side the grates while I was smoking for the first 45 mins or so.

Yeah, I would just give them a little more time then.... Must not have been hot enough! Mine make some great grill marks!!!
