Homemade insulated smoker.

I'm currently building an insulated pellet smoker, using a smoke daddy 12" assembled hopper and I mounted it on a full size insulated stainless electric food warmer. I have a 3" stack in the top, and my burn pot is darn near centered in the bottom. I'm having problems with it running too hot. If anybody had any suggestions feel free to shoot them my way. I've built multiple stick burners, but this one is throwing me for a loop.

First, how hot is "too hot?" What is the lowest desired maintainable temp?

Just a guess but I wonder, is it so well insulated with not enough venting that it's too efficient?
