How do I Cook Sausage

Just got a Traeger yesterday and want to cook some sausage tonight. How would I do them? They are Johnsonville Mild Italian. I'm wondering how long and at what temperature? In the past they were just done at a high temp on a gas grill. I'm sure it's a different process on a pellet grill.

you could smoke for a hour and then turn temp to 250° - 375° or just start off at a higher temp. less then 1 hour to cook if starting off at the higher temp.

I cook the sweet basil flavor all the time. 225 for about 2 hours. When the casing gets all crinkly and colored they are good to go!

So, just ate the sausages on a bun. They were great. I did have to call Traeger about the smoking function. I had it set to smoke and it was already up to 250. A little hot for a smoke. They told me I closed the lid too quick. Open it up for 10 minutes and it will settle around 200. That's exactly what it did. Smoked for about half an hour then cranked it up to over 400 to finish them and toast the buns. They were excellent. So far I'm liking the Traeger. Bought a prime rib and some baby back ribs to do over the weekend. Also have some nice thick steaks in the freezer. Yum yum!

How do you like your prime rib ? finish IT ?

I would run it on SMOKE until the IT is about 8-10 degrees from where you want it, then FTC (foil towel cooler) it until 10 minutes before serving time, then put it in a 500F oven for 5-8 minutes, slice and serve.

I would say use a temp probe. Go to IT of 150F. Smoking is just fine. You want a bit of char on them? Sure, hit them with some direct heat to brown them up, get grill marks, whatever you want. Just get to 150F.
