How low will the Mak cook? I've got a salmon recipe that starts at 150.

Setpoint Smoke (Smoke mode) is around 170°.

Unless I've cured something using Nitrite, I NEVER go below 165°. It's just too risky. If you're curing with nitrite, that's a different story.

Fish is ok to cold smoke but the 1 Star will not go that low.
Smoke setting can range from 165 to 195 (typically runs around 175) to produce the most smoke.

You can put a thermometer in the cold smoker and just run the pit at whatever temp it'll take to keep the cold smoker at 150 depending on the ambient temps.
