As a Big Poppa tradition I cook chili on new years eve and then make chili cheese omelettes in the morning.....chili dogs and chili cheese burgers for lunch and then chili and corn bread (doctored of course) For the walking wounded......
This year I got the bright Idea of serving it for New Years eve...Chili....Little Chili Cheese onion Sliders....you get the drift....
Saved a Strube Ranch Wagyu and diced it up...batch is looking good Maynard..(ode to Spark) My pal that is the serious chef is watching me...we go to din din while it is stewing...all is good cisco.....the next morning i want to stew it some more but have a tee time....instead of putting the chili in the smoker covered at 200 I put it on the stove and go play golf.....I over stewed it then over doctored it and pronounced it not worthy....Problem is I am bringing the main course over to my friends house...keep in mind this guy has worked at the very best in the world....including the now closed Il billi no 1 in the world....
I fire up the one star...hop over to costco...pick up two little trimmed prime rib roasts....hit them with the coffee Balsamic reduction as glue...then a little Little louies with pepper (llgswp) and then the new secret 8th wonder rub...cook for three hours at about 230 and pull them and put them in a pan at 127....
They rested in the foiled pan for an hour and were 133 when I sliced them....It was perfection and one guy was proving it by cutting it with his fork!
