Injection Question

Hi. I've never injected a butt before. I've just been a rub guy. I'm sure everyone has their own recipes and techniques. My question is... how do you do it? How many places do you inject? How far into the butt do you go? Does it help the flavor?

Any recipes?

The salt content, acid content, etc. will all impact how much you want to inject, and how much time you might want to leave it.... Also, the viscosity of the injectate, etc.

I typically suggest about 1oz per pound of our injection, or roughly 1 cup per butt. I inject all over, and try to ensure I get all the muscles addressed, including the "tubes" that run between the larger muscles and the blade.

As far as a recipe goes, if you aren't getting Smoke on Wheels Pork Injection from the Big Poppa Smokers page... Start with flavors that you like - and and pair them up. Something with some brining characteristics will help with absorption. (so make a weak brine, then add your favorite flavors!)

If you make your own injection, don't use a lot of vinegar in it. The acetic acid can break down the fibers too much and you can end up with mushy pork. Don't ask me how I know. :rolleyes:

Apple juice with your favorite rub mixed in seems to be an injection a lot of folks like.

I usually try to go 1" all the way down bit not thru. Pull out slowly.

Also put the but into a bowel as it will be a bit messy

If you like beer that works great too and gives different flavor profiles to the pork.

Did somebody say beer? Now you've got me thinking about which type of beer would best pair with with type of meat!
I foresee a beer tasting event the next time I cook pork butt.

I have tried butt both ways a few more times than I can count and every time I inject I swear I will never do it again. But than I find another marinade and I try again. I still have not done a injected butt I liked better than not injecting.

I used to inject in cryovac but felt it doesn't allow for the butt to freely expand as you're pumping the injection into it. They expand quite a bit if allowed and thus will accept more liquid.

Here's a great pork recipe from a champion pork cooker. Injection recipe, foil liquid recipe, sauce recipt...it's all in there along with cooking instructions. Follow Harry's instructions to the letter and you'll end up with some fantastic pork!
