Ahhh, that explains the $345.
Dave's a great cook. I was at his class in Hollister (CBBQA) last year helping those who were helping Dave. I couldn't hear what he was teaching all the time because we had to keep our distance but was invited over to taste the categories when they were cut up and offered to the students. Fantastic! An aquintance of mine took that class then went on to win 2011 CBBQA Rookie Team of the Year and credits Dave's class as the single most important factor of his winning RTOY.
I had just taken Harry Soo's class a couple months before so the training budget was dry. Would love another shot at attending.

Also, Vince Carrocci from the cooking team Rhythm & Que will be teaching a one day class in Santa Clara but it's on the same day as the CBJ class otherwise I'd be going to the cooking class. Vince is a top competitor and I use the same cookers he uses, WSMs. I would be mostly going to see his techniques with WSMs but would absolutely absorb anything else that he taught. He's a champion cook. $345 per person which is dirt cheap for comp classes from champions.

I teach my technique classes in the $250 range, but you have to factor in the travel expense - so for Northern CA, you need a pretty good size group of folks to cover it and not make it too big an additive. For example it probably adds $80/seat if the class is 15 people.

I teach a full comp class in the $350 range... The extra money buys you the finishing techniques - how to build a box, and the things that make those flavors POP! But I can tell you that giving you all the flavor profiles are not that big a deal... if you dont have the techniques to cook it right, that wont matter... so unless you are already really happy with your cooking, I tell folks not to spend the extra $$. Anybody that is a comp cook that takes a "technique" class from me scores better. The additional info you get is good, and will help close a gap but the technical class that is just BBQ, not the turn-ins... is 85% of battle, IMO.


i wish there were more cooking classes in northern california.

You know I'll teach a class anytime you want, just get a group together! I dont mind sleeping on a couch... LOL I've got about 45 BBQ or Grilling 101 classes scheduled this year (single meat, or two meat classes)... Just did a private comp class last weekend, and have a bigger one in the works. We did a demand based class in NY and it was great. Ended up at roughly $350/head, and was 20 people. Rented a venue for it, to account for potential bad weather, or would have likely been $25/head less. I'll be teaching in Boston Hills this year, and am working with Kelleigh to potentially do a class at Costa Mesa in June. We are talking about logistics Not sure what the per seat will be there... as it will be a fundraiser for Kristie's Foundation for critically Ill children. I imagine I will be donating time, and working with them just covering travel expense, but I have not put alot of time into it yet... as I know more, I will post it out here. I'll get their ideas on it - and have more info this week.

Northern Cal could be a blast for a class... hmmm. We should do a napa class. When I do classes for folks I like include their equipment in the class, so they learn how to manage the fire/techniques on their pits. (this weekend that was 22" WSMs, a 20" Joe offset, and 4 tray KF Rotisserie.)

a Butchers BBQ class...David is one of the very very top cooks out there..I would do more than Trigg but they are just so much work that Im starting to sponsor them too instead of hosting.

Sounds like a plan on that class

I am a member of CBBQA and KCBS both are fine organizations
A serious backyard hero would be well served to become a KCBS CBJ and judge a few contests a year
I judge about twice a year and cook contests hopefully twice a year
Just fun to be out there
