Knife question...

I was looking through BP's selection of slicing knives. I am looking for one that would work best at making paper thin slices in Lox for example. What knife would you suggest is the best choice?

I sure did butcher my last batch of Lox due to not having a proper slicing knife.

I haven't looked at BP selection of knives, but here is what I use. I bought a Sabatier ham slicing knife, a number of years ago. Nice thin blade that is 10" long and very flexible. This allows me to really slice the lox thin.

I think it is. Flexible, kind of like a fishing filet knife. You need some bend, IMO.
