So the Mrs who is 6 months prego calls me and says I feel like nachos tonight. I said no problem I can do that!! Just not in that useless big thing we keep in the kitchen.Picked up prepared and canned stuff... It's late and I am a little lazy. Tex Mex cheese, beef, taco seasoning canned diced hot peppers black olives and Tomatoes mixed with onion and celery.

Put the beef on smoke for 20 mins...

Added the Taco seasoning and went to 375 to reduce..

Got the Nachos ready...I like the color...

Beef was all done.. spread on top of the chips...

Added the cheese and tomato olive and peppers..

Back on at 375 to bake.. and all ready!!

Nice kick from the peppers and really tasty overall.. this ones a keeper!! And the wife is happy!!

that last pic isn't fair. if your not going to share and send some to everyone then you shouldn't be teasing ppl. :( lazy man nachos my @$$. those look killer dude. well done obi wan. ;) more jalapenos.

We may have to add this to the menu for Thursday night at SEGASO! A nice prelude to the Tacos al Carbon.

You got me drooling for a late night snack!!!

I notice the taco seasoning.

I am a huge fan of penzey's spices. They had a store in town when I lived in CT. Their TACO seasoning is really really good. I think it's cheaper than the packets too if you get the bigger sized packs. Just saying you should check them out. The bold is a bit much for my kids but I sometimes do half and half regular and bold. We buy it by the pound and frequently run out. I now keep an extra special reserve amount so we can order more when we run out. I will also say their chile pods are of the highest quality. And while I am at it, if you crave hard to find chiles www.chileplants.com sells live plants (excellent quality I will say) ,but the end of the season they sell fresh pods but varieties are limited. Aji Panca chiles make a great steak rub too by the way, and goes well with a chimichurri sauce!
