STC Requested a recipe for Linguica and green beans, this a traditional Portuguese thanksgiving side dish.
Ingredients (Serves 8)
* 2 lbs fresh green beans, tipped and cut into bite-size pieces
* 2 small onions, diced
* 4 garlic cloves, minced
* 1 green bell pepper, diced
* 4 potatoes, peeled and diced
* 1 lb Linguica sausage, cut into bite-size pieces (I smoke mine first )
* 1 teaspoon ground allspice
* 1/4 teaspoon crushed red pepper flakes (adjust according to taste)
* 1 (16 ounce) can crushed tomatoes
Directions:
1. Saute onion, garlic, and bell pepper in 1-2 Tablespoons butter or olive oil until onions are tender.
2. Place onions,garlic, bell pepper, potatoes, Linguica, and green beans in a large saucepan.
3. Add enough water to cover.
4. Add All-spice, red pepper, crushed tomatoes, salt and pepper.
5. Cover and simmer until beans are crisp tender and potatoes are fork tender (approx. 1 hour).
