Forgot to tell you I used the Big Poppa Double Secret Steak Rub, and Finishing Rub. Topped with a dab of Bernaise sauce until soft and then flipped when served. Dang those rubs are good!

Very very nice! I'm still on the lookout for some bison here..the lead I had a couple weeks ago didn't pan out.
