First brisket on my new MAK2 came out great, IMHO. I was worried because I did an overnight using a PelletBoss programed cook. I cold smoked with the new A Maze N Pellet Tube Smoker, then let the MAK program take over...2 hours at Smoke, then 220* till 160*, then foiled till 195 - 200 and probed for tenderness. Wrapped in foil and in a cooler from 9am till 4pm...and it held heat!
The 12lb. flat came out very moist and tender, with a good bark and a really nice smokey flavor. I'm really pleased with the amount of smoke flavor I'm getting with the AMNPTS and the MAK2. Here's the proof...
