Making your own chipotles

Please post your feedback, as the original message/link didn't use red chiles. I didn't do my garden this year, still planning how/where after the addition.

I read that article a few days ago; it's a good article.

Don't worry about using Red Ripened Jalapenos if you can't find them. Green jalapenos are fine.

The red "Chipotles Moritas", from northern Mexico, have become more popular. Morita literally translates to "little blackberry" because the red jalapenos look black when dried. "Mora" translates to mulberry or blackberry, and "ita" is a superlative meaning small.

The "Chipotle Meco" or "Chile Ahumado" (sometimes called "Tipico") from central and southern Mexico are considered to be the original and are not red jalapenos at all. Ahumado simply means "Smoked," and "Tipico", translates to "typical," because they use typical green jalapenos and look grayish tan when dried.
