I love it when we get to be with Johnny and Trish Trigg. Johnny always makes sure that we are next to him and I get the honor of cooking the comp dinner for him. Other than the legendary status the thing that makes it special is that he is very selective in whose food he eats. I have managed to earn his trust.
He is also in love with his drum so I showed him how I do Tri Tip
Smoked at 250 with oak pellets...no pic
At 130 IT I removed the tri tips and the lid and let the coals get really hot....
I then seared them from the lower position for five minutes a side
at 140 it I let them rest before slicing
Jody doing the carving honors..do you think Johnny looks hungry? We all were and devoured the first one as an appitizer as soon a slice hit the cutting board it was each for his own....
The dinner was Bacon Wrapped Corn (Thanks again Jeanie) salad, Tri Tip, and a crazy Idea I had that ended up fabulously...Jalapeno Cheddar Savory Bread Pudding1 (Thanks to Laura and Tracy from Woodhouse for making sure i didn't mess it up! (I will post the recipe in a separate thread
