I've roasted plenty of birds, both whole and cut in half but last night I spatchcocked a chicken for the first time. I threw the bone section on next to the split bird and removed them at the same time. My favorite piece, or bite of turkey and chicken are the 2 small pockets, oysters where the thigh and back come together. Would it still be spatchcocked if I cut down the center of the backbone, then smashed/broke the bird down flat? I know it would cook, like I said I've cooked plenty of split cavities, but is it still considered spatchcocking, or is there another name? thanks
