Got these HUGE Beefy bone in short ribs from my friends at Strube Ranch.
A little Annies Garlic Olive oil for the glue...Plowboys Bovine Bold for the rub....set her on the MEjphis Pro at 260 until an internal of 150...I find that with the wagyu I can dook it to a higher internatl temp...renders marbling a little better...
Seared it for two minutes at 500 criss crossed for 200 minutes fliped over to bone side and hit it for two minutes. Doused it with Cowtown BBQ Sauce...I think it is the house sauce at OKla Joes in KC...if not it is a real nice example of Kansas City Sauce...
