Hello all,
My name is Ben and I am a pellet smoker. I have used a friend's Traeger for a while, and my wife, knowing I was looking, surprised me with a Texas as an early birthday gift. Already getting some great details about helping keep the thermal mass up to regulate the temp better. It was cold here this weekend and those first ribs and brisket used a little more fuel than I was expecting, mainly due to the cold temps outside here in North Carolina.

Looking forward to helping and getting help where I can.
