Got me my first pellet smoker 2 wks ago, a Yoder YS640 w/upper rack.

I've cooked in it 4-5 times so far, and have been loving it. I came previously from a WSM, which I still own and need to give some lovin to before too long (sometimes a super-smoky Southern-style rack of ribs is delicious).

I got serious plans for this smoker over the summer. So many cuts of meat and preparations that I haven't tried before. I made my 1st breakfast fatty last week, and that was pretty amazing (but absurdly greasy), and I tried my hand at some ribs and chicken wings last weekend.

This weekend, though, is the biggun -- BRISKET. I ordered an Amaz-en 12" tube smoker to supplement the unit, and am going to be trying my first long-term smoke with this brisket. I'm hoping to give it a solid 11-12 hrs on hickory and apple.

I also brew my own beer and enjoy my delicious homebrews out of the keg while cooking on the Yoder.

Welcome Nick! Sounds like you are off to a great start! I feel your pain on the fattie :) Hop right in and lets see some pics of those cooks! If we have a contest this weekend please post your brisket and win some great prizes.

Welcome and congrats on the new smoker. Agree with Rick that you are off to a great start and doing long term cooks on a pellet smoker is much easier that non-pellet smokers. The hard part is realizing that you do not have to open the lid to check the meat, just let it cook and check you internal temp monitor. Enjoy!

Welcome to the forum Nick. Congrats on the new Yoder, sounds like you're putting that new baby through it's paces. Nick, one of the big differences you'll find between the WSM and your Yoder is the smoke profile. Keep experimenting and ask a lot of questions. You have some of the best cooks on any forum right at your finger tips. Good luck and good smoking.
