So at holiday potluck last week a buddy brought a smoked turkey as he does every year and it was SO incredibly good I decided I need to get in the game. He has a fairly inexpensive $200-$300 propane cabinet style smoker, so that's what I went looking for.

As I was doing some research, I was reading about the different models and types of smokers when I came across these "pellet smokers"... they sounded kinda cool...then I saw a pellet smoker that also works as a grill an oven (hmmm I have been thinking about replacing my 12 year old weber gas grill) . I thought now THAT would be the ultimate - all in one.... Then I saw the prices...WHAAA!

Hmmm I wonder what's on Craigslist....oh look there's one. So I offered the guy what I could afford. Fast forward 6 days after that potluck...I have a lemon, garlic, rosemary, chicken smoking on my "new to me" Memphis Pro, as I type. The BBQ gods smiled upon me this week.

The chicken tasted pretty good, but not great. Acceptable for my 1st attempt. It looked great though. It didn't taste smoked to me. I used BBQ Delight - Apple pellets. Smoked at 200 for 4 hours and finished at 375 for he last 30 min. It was very juicy, but overall it was really not much different than when I roast them in the oven. I was expecting to see more smoke as it cooked... but I have zero experience with smoking so I have nothing to go on.

Outdoor temperature was about 20 degrees today and the temp setpoint was rock solid - very impressive. I did a pan of cookies after the chicken and they turned out good too. Never thought I would be baking cookies on my grill - but I like it.

My next attempt will be a turkey on Christmas Day. Planning on using Hickory pellets for that one. Temps are supposed to be in the single digits on Christmas, so that should be a good test.

Memphis is a light smoker try hickory pellets....I really dont like the bird on that long.....275-300 all the way....may want to look at the amazn tube smoker too as an accessory
