Need help with cooking programs

It took me about a month but I finally got my 1 Star wifi module to connect to my network by adding in an old access point with WEP security. Yuck. There needs to be a way to turn it on and play with the settings without actually firing up the grill. But I digress...

To my question. Today I decided to try setting up a cooking program but I'm confused by the terminology. When defining steps it's not clear what refers to the beginning of the step and what refers to the end of the step. What I'm after in this particular case is this:

Smoke for 1 hour.
Cook at 240 until the IT is 160. (sound alarm so I can foil)
Cook at 240 until the IT is 190. (sound alarm so I can test done-ness but keep cooking until I turn off the grill)

My program looks like this:
Initial setting: Smoke
Step 1: Type: Time (1 hour) Temperature: 240
Step 2: Type: Temp (160) Temperature: 240
Step 3: Type: Temp (190) Temperature: 240

Does that look right? It's not at all clear to me as I was going through the menus to set this up. Does the initial temperature in effect define the first step? It's counterintuitive to me because I read step 1 as "cook at 240 for 1 hour" but I think it actually means "cook at the temperature of the previous step for 1 hour and then change to 240".

When using a program, when should the program be started? If the initial setting is 250, let's say, and the next step is a time based temperature change then I assume I should preheat the grill to 250 manually and then start the program when I put the meat on. Is that right?

You could just reset your meat probe alarm to 190 once the initial 160 is reached but I see what you are trying to do with the cooking program. The cooking programs are designed to change temperatures of the grill not sound alarms at set points although the text/email notification would be sent at each change.

Here is what I would suggest in your scenario, run the cooking program for the first step only (because 240 is the last temp you want). set a meat probe alarm for 160, once this is reached it will alarm and then change it to 190.

On the cooking program the initial temp is what you start at, in this case "smoke".
The first step (change temp) is at 1 hour then the grill will move to 240.
I would read this as smoke for 1 hour then move to 240 degrees.

No need to preheat the grill but you shouldn't start the cooking program until the grill is past the igniting phase (it will display "igniting" on the web page).

Dave. When I was beta testing the wifi I'd disconnect the fan, auger, and ignitor from the pelletboss which allows you to do all kinds of testing without firing up the grill

You can do the same by removing the fuse.
