Need Quick Turkey Advise/Opinions

Okay, so I'm doing the bird on my Memphis and was planning on doing the routine under Big Poppa's thread (great info) of cooking at 275 for about 6 hrs (16.5lb bird). Now, it's looking like time may be an issue so I was wanting to know the results if I do 325 for a temp. I am getting an A-Maze-N Tube in the mail today so how bad will the higher temp affect it's effectiveness on the additional smoke?:confused:

None at all as far as the smoke generated by the tube. But the quicker the bird cooks the less smoke it takes on. At 325 your looking at about 15min or less a pound.

I just looked through my old logs and I did a 13lb whole bird (not stuffed) in a pan at 250 on my Traeger and it took 3 hours 10 mins to reach 163 in the breast.
I prefer to cook my birds in the 300 range now which seems to make the skin a bit less chewy than at the lower temps. If you go up to that higher temp be careful about putting anything on the skin that burns in the 300 range as it turns the skin really dark (paprika, sugar, butter, etc). I agree with Rick that a 16lb bird should cook at or under 4 hours at 325 particularly if you butterfly (spatchcock) it.
And the tube will help with the smoke flavor in the 300 range.

Burn cleaning the tube now. Schedule has changed again (I wish folks could make their minds up!) so can cook at 275. Can't wait!
