Hi all! Been smoking for about 10 years on all sorts of different smokers. My dream has always been a big Klouse offset monstrosity, but I just don't know if I want to go in that direction anymore. I want the capacity to cook for a small army, but also will allow me to smoke a single chicken just for the wife and I....without needing 10 lbs of fuel just to heat the rig up.
A common concern?
I've been looking at the Cookshack FEC 100 a lot. It's big enough for what I want to do, I like that it has the temp probe option (a huge deal for me) and the fact that it is insulated for those cold winter smoke outs. But the complaints about the lack of smoke have me concerned.
The Yoder YS1320 intrigues me as well but I'm finding it hard to get any good information, pics, videos on it at all. I really don't know much about it and that makes it hard.
I'm only interested in smoking. At these price points I really want something that is going to last, I'm so tired of breaking smokers or throwing $100 in upgrades to help hold the temp...etc. A new Klouse offset would last me the rest of my life, can I get that same reliability in one of these units?
I hope I answered all the typical questions. I'm willing to look at anything and take any good advice. I'm very open minded here and have a few months before my purchase, just trying to make the best, most informed purchase I can.
