If you are familiar with offset barrel-type smokers, a pellet smoker is basically a refinement of that concept. There is a bin on one side you fill up with pellets (compressed sawdust -- they look kind of like rabbit food). The smoker feeds these into a "firepot" where they are burned (under the grates). Most of the better smokers have thermostats that can keep the temperature stable for a long cook. Pellet smokers are awesome for cooking at a long time at a low temperature (225 for 14 hours was my last cook) with plenty of smoke flavor.
