Christmas was a very busy day for us. Our Daughter's BF came over for Christmas dinner, and with lots of food to prepare we didn't get a lot of pics, but here are a couple:
First, we brine-cured an 8 lb Picnic Ham a couple days beforehand and it went on about Midnight, Christmas Eve, to to smoke overnight.
Here's what it looked like after 10 1/2 hours in the MAK on Smoke Mode. It was good!
Next we smoked a duck. To go with the Ham & Duck, we made a pan of Chorizo Stuffing, roasted potatoes (with the duck fat), roasted turnips & carrots, some homemade Cran-Apple-Orange sauce, some deviled eggs, a loaf of homemade crusty wheat bread, and a boat load of duck gravy!
It was a real feast!
