Had a craving for some fish last night and I hadn't used the MAK griddle in awhile so I pan fried some cod up for dinner-
Chunked up a cod filet
Made a breading with Panko bread crumbs, lemon zest, parsley, cayenne pepper, and salt
Mixed some egg whites and a little beer for the glue (sorry Spark, no FT in the fridge)
Dipped the fish in the beer/ egg mix and then rolled in the breading
Poured a little olive oil onto the MAK griddle and on went the fish
Flipped after a couple of minutes
Off the griddle
Served up with some rice, green beans, and a nice Pinot Grigio
Oh yeah
This came out great on the MAK griddle (it would work well in a cast iron skillet too) Even though it was fried, the fish still came out nice and light. Definitely will be doing more fish on the griddle.
