So, I got Pat LaFrieda's Big App for Meat for my iPad. It's pretty cool. I didn't know much about various cuts of beef, for example, except that my favorite was ribeye for a long time. Now, I know about more thanks to this forum and Pat LaFrieda's app. It's got videos about the various cuts of meat, pictures of where they come from, info on how tender a particular cut is, etc.
Who's Pat LaFrieda? Well, he's the big meat purveyor to many of the New York restaurants. Black Label Burger at Minetta Tavern? That's Pat LaFrieda's blend. You name the NYC restaurant, well...Pat LaFrieda just might be the guy who supplies their meat.
