Yes. I did some Pulled Beef Cheesesteaks a few weeks ago. They were a hit with the family!

Several months ago I did a peeled beef knuckle, cooking it much like a butt. It made some excellent cheese steak sammies, as well as sliced lunch meat, Italian beef sammies, and beef tacos.

I was disappointed to learn that the ring doesn't come from the smoke but from a chemical reaction from the nitrates in the meat and rubs.
