Did some ribs three ways today.

The pepper EVOO with MAKs chipotle rub was my favorite. The pepper EVOO adds a nice touch of heat..it's very good!
The Hawg rub was good! First time trying it and it got the thumbs up from the boss. I used the grilling sauce on the side so the jury is out on that..need to use it as a grilling sauce next time.
The ends with the seasoned garlic salt with pepper were great I thought. The wife said I used too much seasoning..she's probably right.

Puting out some smoke! I love my MAK!

I've been playing with cook times lately. I think I've been over cooking them in the past a bit. These you could bite them and not pull all the meat off the bone..the way I like them. But I think they needed another 20-30 minutes because they were a tad tough still. They were good today and will be great for lunch tomorrow too :D

Patrick I didn't foil these. I usually do foil and cook at 275 but wanted to try something different. I smoked these for two hours then cooked them at 250 for 3 hours turning them over at the half way mark.

Looks real good Chili! I like them with a little tug also. I know I am in the minority, but I still like 225 better than 275. Thanks for sharing the pics.

I've cooked em from 225 to 275 and have settled on 240-250 I think. I can cook em in foil and without at that temp and not have to worry about burning a side especially if I don't foil em.
