Pork vs Ham

So I'm cooking the Biscuits n Ham recipe on BPS site that was submitted by cowgirl (thank you very much cowgirl). My wife pointed out the recipe uses ham. And the difference between ham and pork is, essentially, pork that's been cured.

Am I the last to know this? I feel like such a rookie. :D

Pork back leg that's been cured is ham. Pork front leg that's been cured is a picnic ham. As far as I know, no other part of the pig other than the front and back legs is called ham when cured.

Thanks scooter. Like I said, I feel like such a rookie.

And by the way, that recipe is unbelievable. If you haven't tried it yet, do it this weekend. Those onions will become a staple.

We're all somewhere on the same learning curve my friend! This forum is designed to help flatten out that learning curve and get us all knowledgeable about meat and smoking meat quicker than if we plodded along on our own. ;)
