We were forunate enough to be asked to cook Saturday dinner again for the entire fire, safety and medical team at the AutoClub Speedway in Fontana following the race Saturday Night. This is the 3rd time in 4 years we have done this. It is a great time and we are priveleged to cook for these folks and their families.
Menu was Pulled Pork Sandwiches, Potato Salad, our signature Cole Slaw and our Smokey Baked beans. Everything was cooked on the pellet cookers, except the beans, we did those on our charcoal cooker. This was the first big cook for the new smokers and our new trailer. Everything worked perfect. The pellet cookers make a big job like this easy. We cooked everything at 275*, and the butts were done in 6-7 hours!
It was a very long day, and lots of hard work, but we had a blast and the reward was on the faces on the hungry guys and gals who worked all day to keep both the drivers and fans safe!
