Ribs getting happy in the MAK

I have done 4 on our MAK the secret is to overlap them and put a piece of 1 inch steel strap about 6 inches long to keep them separated length wise. Foil the strap with a excess 2 inches on each end so you can fold them over to make it look like a Z. This keeps the airflow going and smoke get to all of the briskets. They ones we did were over the 12 pound mark.

I was skeptical of the rib rack vertical cooking but man the MAK does a great job cooking evenly!

You have to be careful when you load it, it can get kinda crowded in there. It works better for baby backs, spares did not work at all for me, too floppy. Next time I might try the St Louis trim.
