Ribs - Tailgating Procedure?

I'm looking to bring some MAK smoked ribs to a tailgate and was wondering on how to modify my cooking procedure. I normally smoke 3 hours at 270, foil w/ Coke for 1 hour, unfoil and finish for 1 hour...

Anyone have success on smoking baby backs / St Louis ribs, refrigerating over night, and finish the following day on a gas grill...

Sounds like you like your ribs falling off the bone. i would cut back on your temp and time a bit and them cambro a couple of hours before game time and chow down. Never had much luck reheating ribs. Just never the same. Good luck

If I was going to bring ribs to a tailgate party the next day I would cook them but not sauce them then into the fridge. Take them to the park the next day. I might let them come up in temp a bit then sauce them and throw them on the grill for about 5-10 minutes a side. Just enough to carmelize the sauce which should sufficiently reheat them.

I've done ribs ahead of time by simply doing everything but finishing them, pretty much the way Scooter describes, and they were fine.

The trick is getting them cooled down quickly once they're tender so they don't overcook.

I have heard of guys using the 3-2-1 technique and only cooking steps one and two. then when you want to finish them, do the final hour at the tailgate party. I havce not done this myself but heard it works well. Normally I cannot wait until the next day.....good luck!

It does work great i have done it before.
