now I'm going over what I plan on accomplishing this weekend and at the what was I thinking stage.... at least tomorrow my cousin is coming over and I will have help
I took a bunch of stuff out of the freezer to start curing this weekend for smoking next weekend..... beef for pastrami, pork belly, a ham........
Candy store? This is more like Christmas morning! You know there are going to be presents under the tree, but you don't know how many, or what's in them. I can't wait to see what you make for sausage. The sausage making bug has bitten me and I am trying to decide what and how much to spend on the "cure". HELP!!!
the tentative plan (I often change course in the middle of cooking) is :
Turkey breakfast sausage - patties and links
Summer Sausage - won't finish this tomorrow, it's a multi day project
Hungarian Paprika Sausage
Chicken Basil Tomato Sausage
Maybe something else - we'll see how quick we are working
I'll take pics and eventually write up recipes (I still need to do the turkey cranberry sausage and pumpkin ravioli)
and my Traeger is unhappy tonight.... I think it's the hotrod... I couldn't get it started manually in the dark.... chicken thighs baked in the oven - blech ....... I'll pull it apart again in the morning and finish troubleshooting - if it's not the hotrod the controller is funky ............. anyways, I might have to smoke anything we are smoking in the Bradley tomorrow
