I was thinkin abpout Sparks sausage post.

I know bacon rules the food chain heheheh but sausage supports in...From a likker Brat to a beautiful Italian both hot and sweet...Keilbasa, linguica...(love the hawaiian linguica)
to the great texas sausages....

If you guys have a favorite and a link to buy please post...

Thanksgiving is around the corner and Im looking for some unique sausages for my stuffing fests

Several years ago I was sightseeing in Fredericksburg, TX. My cooler got stocked with smoked sausages from Opas. Nice town and great food.

Since I live in North Carolina, I have started to make my own sausage. I blame Nepas for this new addiction. I find that it is a lot of fun to make. I usually have more mouths to feed when I am making it. The smell of me smoking anything draws my neighbors out, in a hurry.

I was visiting with relatives in PA this past Saturday in Gettyburg (during the snow storm). I asked my cousin to please, please bring me five big sausage links of Cajun Smoked Sausage from Groff's Meat Market in Elizabethtown, PA. When my parents lived there I developed a taste for their Cajun Smoked Sausage. It has a bit of a bite to it. Perfect for red beans and rice, or gumbo, or just by itself. I plan to break it down and vacuum seal the pieces for freezing.

Slovacek's in Snook Texas... You'll have to call your order in because the website hardly ever works... they don't ship in the summer and then forget to turn the website back on. They have a jalapeno sausage to die for. Well worth it... Texas Sausage by Slovacek

Sparky, this would be a good one for you 38 miles from Sacramento.. I had a buddy in Jackson and this was a stop between his place and mine in Hollister..'

i have to say the best sausages in Northern California would come from the Lockeford Meat company in Lockeford..
we found it one day as we were driving on the way to the foothills and noticed a line outside of this old time butcher shop.
we parked got out and were caught up in the meat mania..
if they only shipped out meat>>>

I have to go with Elgin. Used to travel to Austin a lot and one time had to drive from Houston. Along the way I passed through Elgin, TX. Unfortunately, it was 2am in the morning and I couldn't get any!!!

There is a place in Albany, Oregon called "Pepper Tree Sausage Company". Good stuff. They renamed themselves "Pepper Tree Sausage House", and their website is http://www.proaxis.com/~ptsh/.

If you are in Oregon (perhaps after visiting the gang at MAK), drop by for lunch.
