I did some pepperoni in my Bradley smoker and used pellets in the AMZNPS.

Did the smoke and now in my dry cure fridge. The pepperoni is at day 3 of 7-10.

Digital temp/fridge control. The fridge piggy backs off the control plug.

What temps do you have to keep the fridge at? And how much humidity in there?

All depends on what type of dry cure item your doing.

This recipe calls for the fridge IT of 40* and the Humidity between 70-80%

My R/H is holding between 72-77%
Fridge between 40-41*
