Skewers and thongs

How do those FireWire skewers work on BP? How do you flip?

What is the best set of thongs? Not looking to break the bank but the one I use is kind of flimsy and always feel like that hard long cook is going to end up on the ground.

i use weber tongs. and the firewires you leave the end part out of the smoke so it stays cool to the touch. just grab it on the end and flip.

I like this type tongs that I get at a restaurant supply store

I'm fond of the OXO 'Good Grips' tongs. Just bump against your belly/whatever to release the lock so you can grab and flip.

Pinch free, and the nylon surfaces are good up to catastrophic cooking temperatures.
