Any tips on how to best cook skirt steak on the MAK?

C coachv79 New member Dec 14, 2014 #6 Fajitas Trim the silver skin. Recommend a marinade of equal parts pineapple juice & italian dressing. Place it in a plastic bag and leave in the fridge overnight. Season with seasoning salt or a cajun rub. Cook over a charcoal high heat quickly.

Click to expand... The best meat for jerky is very lean. Fat in the meat turns rancid quickly and ruins jerky and shortens the storability.
