Smoked quail

Have 6 frozen quail that my grandson gave me from a quail shoot in Georgia. Has anyone got a recipe for the smoker or grill that they are willing to share?

Oohhhhhh quail!

The only quail I have had was at a restaurant. And never smoked. Keep us posted on your results.

Spatchcock those babies up! Maybe a little brine first. My cousin owned a quail farm, they're meaty little buggers.

While I have never done quail cause we dont have them around here, I do a lot of pheasant and partridge. I always marinade game birds overnight in wishbone Italian dressing and some rub (incorporates a lot of spice if you like that sort of thing). I will put a little more rub on right before cooking. Smoke for 30 minutes or so then bump the temp up to 350 and cook til done. Not sure how long that would take for a quail (assuming you are doing them whole) but for pheasant breast takes about another 30 minutes. Thats how I like them anyway.

Finally came up with a recipe that I thought would lend itself to being smoked. Here they are in the bag.

Rinsed, cleaned up and partially split.

Used these seasonings and topped with bacon to provide additional moisture.

Set Boonie at 160 to smoke for about 35 min.

Sautéed. Some criminis in butter, Pinot noir, garlic, salt and pepper. Then mixed in some mushroom soup and let simmer for a few minutes.

Then poured over the quail and let it smoke at 300 until internal temp reached 160.

How it looked on the plate. It was tender, moist and tasted good.

Wife and I really thought this was good. Would make again.
