I brined them for 12 hours in:
1/3 c. brown sugar
1/4 c. non-iodized salt
2 c. soy sauce
1 c. water
1/2 tsp. onion powder
1/2 tsp. pepper
1/2 tsp. Tabasco sauce
1 c. dry white wine
Set it to smoke burning Washington apple pellets with a rub of olive oil and "fin & feathers" I cooked it for 2 1/2 hours. Hit an IT of145.
