Thanks for sharing! My question is when you pull them off the grill are they only partially cooked when you add them to the pot for an hour?

Nope they are fully cooked (IT of 165) you could take them off early and finish them in the sauce.

I am in the same boat as Tatonka3A2. Anyone got a good sauce recipe?

This is quick Marinara sauce recipe that my wife uses (she is part Italian and a sauce snob)

2 28 oz Cans of crushed tomatoes (she uses the Cento brand)
1 Bunch of fresh basil stemmed and chopped (about 4 tbsp.)
1/2 Cup extra virgin olive oil
2 Small onions, finely chopped
4 Garlic cloves, finely chopped
1 tsp. Dried Oregano
1 1/2 tsp. Sugar
1 tsp. Crushed red pepper flakes (you can omit this or add more to taste)
Salt and ground pepper

Heat oil in a large heavy saucepan over medium heat. Add onions and garlic, sauté until tender (about 5 minutes)

Stir in tomatoes, oregano, crushed red pepper, and sugar

Bring to a simmer over medium high heat, decrease to low and simmer for at least an hour.

Season to taste with salt and pepper.

This is a good basic sauce that you can get creative with adding things like mushrooms, carrots, italian sausage etc...

that's really similar to mine but I use 2 cans of the Cento Italian tomatoes, hand crushed, and 1 can of crushed (the crushed is usually Pastene with Cento as second choice). Dried basil instead of fresh, more oregano than basil and no sugar. I have the part Italian sauce snob thing going also.
