Smoking All Weekend

Well, #520 is going to be out of commission for a few weeks, so I decided to stock the freezer. Started with a tri-tip for dinner last night. It was a very small one. Turned out ok, but it cooked too fast and the rest of the meal wasn't timed right. No harm, no foul.

Next, I turned my attention to couple of butts, which I put on last night and are chugging along nicely right now. They are at 158*, and they look great. Used two new rubs, so we will see which one we like best.

Ribs are on the menu for tonight. I'm not a big rib fan, but the wife loves 'em. I'll try to make Sparky proud.

Tomorrow is chicken day. I have four chickens I will brine tonight and smoke in the morning

I smoke more chickens than anything else. We pull it and use it to cook anything that calls for chicken (ok, we didn't like chicken enchiladas with the smoked meat, but everything else has been good). My favorite is BBQ chicken nachos. I can eat those every day.

Anyway, just wanted to stop in and say hello. Enjoy the weekend.

what are you smoking on if your smoker is out of commission? ribs. sounds good to me. don't forget the FL. turns out a great rib.

Number 520 is not out of commission just yet. She just had a 24 hour marathon, and she ran like a champ. After a quick clean out this morning, I'm going to crank her up again for the chickens.

I'm voluntarily taking her out of commission for some cosmetic work. She'll look good as new in a few weeks.
