Smoking Cheese

Now that the temps are getting low enough to cold smoke, what wood flavors or combinations would you use on the following cheeses.

Extra sharp chedder

Gouda

Provolone

Munster

Apple primarily. I have also used other fruit woods (peach & cherry come to mind) with great success. The fun is in experimenting. They will all be good, just some better than others. The last cheeses I cold smoked with apple were X-sharp cheddar, chipotle cheddar, habanero cheddar, garlic cheddar (really, really good), and some bacon cheddar. I am almost out. I will have to go to the cheese factory in West Jefferson, NC for more cheese, soon.

Ummmm, yum! Cheese factory, sounds amazing! Wish we had one out here.

Hickory isn't bad for the sharper cheeses such as Swiss & Cheddars. And Sugar Maple is great on milder cheeses. But my overall favorite is definitely Apple.

Try rolling some of your cheddar & Gouda in paprika before smoking it. It adds another really nice dimension to the flavor.

I use oak for the hard cheese like swiss and provolone. I put the chedder in for only one hour and the rest if the hard cheeses for two hours in a medume smoke , heavy smoke makes the cheese bitter. My cheese does not even turn brown. I like my smoke to add to the flaver of the cheese , but not take over. I let it rest in the fridge for three days. I use a Porky Pa in an old electric smoker. Cutting the cord of was the best thing that I did for it. Why is another story.
