well, did ya'll see those pretty ribs matt did. i wanted some pretty ribs too. so i found out how they were make and away we go.
1st mistake. make up some of my own rub. i call it. wait for it.....Sparky's Voodoo Rub. now a smart person would have used the same rub in the pretty ribs. but i am not that smart yet. so i made my own. no bueno.
2nd mistake. way to thick w/ the rub.
looking good so far. see why i own a mak. smokey, smokey.
i made my the schmear exactly the way i was suppose too. this stuff was so good. wonderful taste. until i added some of my own stuff to it. added some touch of kahlua and a touch of my favorite rub. again, no bueno. mistake again. should have left it alone. still haven't learned yet.
this is a work of art. you ppl who know me know what i mean.
well after some FL. the color isnt the same but that could be because of how thick the rub was put on.
made up my own sauce. i didn't have all the ingredients that i needed to make the right one so i improv'd it. some blue hogs mixed w/ hot squeeze. interesting.....
mistake. sauce put on was way to thick. way to thick. stickey but thick.
cut me up some bones and got busy. i did eat the whole rack. way to spicy for me.

i let my mentor down. i will get better obi won. next time a veteren comp cook tells ya to do something. listen. don't think just do. next week it will get better. promise. just placed a order.
trying to make it perfect isn't any fun. you really have to pay attention. in my world its alot funnier. i like just winging it and cooking. its my form of art more or less. not good in their world. this cook made me think alot about what the comp cooks go through. it all has to be all repeatable all the time. my hats off the all the comp cooks we have on this forum. bravo gentelmen and ladies.
