Heat smoker to 400
Season the chicken I used Big Poppas Desert Gold
SLice the onion and quarter the mushrooms, add capers, chicken stock (2 cups) juice of one lemon, and thre pads of butter and season the who kit and kaboodle Once agian I used Big Poppas Desert gold
Sear the chicken for 5 monutes breast side down, roate the chicken keeping it breast side down and cook for another 5 minutes
reduce heat to 325 and cook until the internal at the breast hits 165
plate it on a bed of pilaf and spoon the lemon mushroom sauce over the chicken!
