Spatchcocking a turkey

I want to spatchcock a turkey and am wondring if I can replace the heat discussers with a cookie pan to catch the drippings to use for gravy

You can put any of the parts in the dishwasher because they are all 304 stainless steel.

That being said they are covered in grease and smoke and will very likely stain the inside of your dishwasher causing you a trip to the dog house...

Urnmor-- I like catching the turkey drippings for gravy too, but if you took the FZ covers off and put a cookie pan there instead, you run into two problems: 1.) the grease tray slopes to the right to allow for grease to run off, so the right side of the pan would be lower, and you'd likely lose a lot of the drippings. 2.) the cookie pan would be getting the blast of direct heat, and you'd lose a lot to evaporation. (Not to mention it might warp and/or give you uneven cooking and hot spots in the grill.)

You could just set the cookie pan on top of the FZ covers if you don't mind it being uneven, but what I've found works great is using a disposable tinfoil casserole dish, and putting that on the grates, then having the turkey on an upper grate (or if you don't have an upper or half upper grate, the grate from your warmer box should give you enough clearance to slip a shallow tray or cookie pan underneath). That way the drip tray is still level and you won't have to mess with the flame zone covers.

The grate from the warmer box is outstanding Kat. I would have never thought of that. Urnmor, when the time is right, get yourself two half shelves for the upper half. You'll love and use them a lot.

Just got to reading the answers. I will use tinfoil dish and place the turkey on the upper grate. As this will be a relatiely small turkey it should fit, if not I will use the grate from the smoker box.

And no more FZs in the dishwasher no need to go to the dog house or get coal in my stocking.
